Now that we have been in our new home for over a year, I think it is safe to say at we are settled in. For the first year or so, we have been mainly focused on improving our home and getting used to the area, but now that we have been here a while, we are excited to meet more of our neighbors this summer.
We are hoping to get together with some of them for a block party or BBQ at some point this summer, because we really think that that would be a great way to get to know more people and to get to enjoy great food! When we get this planned, I am definitely going to serve this Carne Asada Quinoa Bowl as one of the main dishes – it is fresh, delicious, and not the same as your typical BBQ or block party food. I have to admit that I never tried quinoa until just recently. My husband, on the other hand, tried it many years ago when he was living in Bolivia which is one of the countries where it is produced. He always told me about it, and how he wasn’t sure about it at first, but that once he tried it he really learned to like it a lot. The first time that I tried it, I have to say that I fell in love too! It is a great ingredient to use instead of rice, and it tastes great too!
For this recipe, we used truRoots Quinoa which we found at Sam’s Club. We were really attracted to it because of how simple it is to prepare, and because it seemed like it was really high quality! It is certified USDA Organic, Non-GMO Project Verified, and Gluten Free so we really felt good about including it in this delicious meal. We also purchased a 32 oz 6 count package of Swanson Chicken Broth while were were at Sam’s Club and we used it to cook the truRoots, which was very convenient. Swanson Broth is definitely a go-to for me for so many recipes. It is great at bringing out delicious flavors and is trusted by chefs, which gives me confidence that it is a great product.
To make this recipe, I started by cooking the quinoa with the Swanson broth like I mentioned above, and then I got started on the rest! I wanted to make sure that I had lots of fresh, flavorful ingredients, so I decided to include freshly chopped lettuce, tomatoes, cucumbers, and cilantro, as well as fresh cilantro and roasted corn. All of these flavors combined together with the quinoa to form a delicious base!
To add some extra protein, I made some of my delicious carne asada, cut it into strips, and added it to the quinoa bowl. You can get the full carne asada recipe here.
The final touch was to add this delicious and creamy chipotle lime dressing. It is kind of spicy, but the crema balances it out nicely and it works perfectly with the rest of the ingredients.
This quinoa bowl ended up being an absolutely delicious meal and both my husband and I went back for seconds, and it would have been thirds if there had been more! We are looking forward to making this often this summer and sharing it with all of our friends an family!

Carne Asada Quinoa Bowl with Creamy Chipotle Lime Dressing
Ingredients
For the Quinoa Bowl
- 1/2 Cup of prepared truRoot Quinoa
- 1/2 cup of chopped lettuce
- 1/4 cup of chopped tomatoes
- 1/4 cup of chopped cucumbers
- 1/4 cup of roasted corn
- Sauteed Onions
- 3-5 slices of carne asada
- 1-2 tablespoons of creamy chipotle lime dressing
For the Creamy Chipotle Lime Dressing
- 1/2 Cup of Sour Cream
- 1/4 Cup of Mayonnaise
- 1/4 Cup of butter milk
- 3 Tablespoons of fresh lime
- 1-2 Chipotles with a little bit of the adobo sauce
- Parsley Chives, Salt, and Pepper
- 1 Clove of garlic
Instructions
- Add the layer of lettuce to the bottom of the bowl first.
- Add the rest of ingredients one by one on top of the lettuce in sections.
- Drizzle the creamy chipotle lime dressing on top and enjoy!
For the Creamy Chipotle Lime Dressing
- Add all of the ingredients to a food processor or blender and blend until everything is creamy and smooth.

That dressing sounds amazing! I don't eat meat but I eat a TON of quinoa, I was just at Sam's yesterday and wondered if the Tru Roots brand was good, glad to know it is! I'll have to pick some up next time!

I love Swanson's chicken broth too. I add it to my masa when I make tamales instead of water, in addition to the red sauce. So much flavor. Your Carne Asada bowls look amazing. Carne Asada is one of my very favorite things.
