I don’t know if I have ever seen a time where it was more important than now to strengthen our immune systems. While there are a lot of vitamins and supplements available to do that, my favorite way is by eating healthy food that can naturally provide the nutrients that our bodies need.
Growing up in Mexico, my mom used to make us lots of soups. Some had seafood, some had vegetables, and some had other types of meat. One of my favorite types of soup, however, are creamy soups that are made with a base of tasty vegetables. Today, I am going to share a recipe for creamy ginger and carrot soup, which not only is good for you, but it also tastes great!
How Do You Make Creamy Ginger and Carrot Soup?
The first step to make this recipe is gather all of the ingredients that you will need. Specifically, you will need the following (see recipe for quantities):
- Ginger Root
- Carrots
- Sweet Potato
- Garlic Cloves
- Celery
- Red Onion
- Chicken Bone Broth
- Smoked Paprika
- Ground Cumin
- Oregano
- Lemon pepper
- Salt
- Olive oil
You will start by sauteeing the ginger, onion, and garlic in olive oil for a couple of minutes. For this recipe, I used my new T-fal Platinum Collection cookware. I sauteed the vegetables and actually made the entire soup in one of the large pots and it worked really well. This particular collection also has metal-utensil safe non-stick coating, stainless steel handles and it is dishwasher safe! After you sautee the first three ingredients for a couple of minutes, you will add all of the remaining ingredients except for the chicken bone broth and sautee them for about 5-7 minutes.
Next, blend all of the sauteed ingredients together in a blender and empty it back into the pot where you sauteed everything. At this point you will add the chicken bone broth to the pot and bring it to a boil for 5 minutes. Depending on the desired consistency, you can add more chicken bone broth.
At this point, add salt to taste and it is ready to serve!

I mentioned above that this soup is healthy and can help strengthen your immune system, so you may be wondering how.
This soup includes ginger, which has lots of health benefits, including the fact that it can help lower the risk of infections because of the amount of gingerol that it contains.
In addition, this soup includes chicken bone broth. Chicken bone broth is associated with collagen and has many benefits such as being good for bone and joint health and possibly supporting immune function! I have replaced regular chicken and beef broth with bone broth and I have noticed a big difference.

Ingredients
- 2 Tbsps Ginger Root Diced
- 1/2 Cup Carrots Diced
- 1/2 Cup Sweet Potato Diced
- 3 Cloves Garlic
- 3 Celery Stalks Diced
- 1 1/2 Cup Chicken Bone Broth
- 1/2 Tbsp Smoked Paprika
- 1/4 Tbsp Ground Cumin
- 1/2 tbsp Dried Oregano
- 1/4 Tbsp Lemon Pepper
- 2 Tbsp Olive Oil
- Salt To Taste
Instructions
- Start by sauteeing the ginger, onion, and garlic for three minutes in the olive oil.
- Add the rest of the ingredients, except the chicken bone broth and sautee for about 5-7 minutes
- Blend the sauteed ingredients in a blender until smooth and return to the pot
- Add the chicken bone broth and bring to a boil.
- Simmer for about 5 minutes. Add additional broth to thin out if necessary.
- Add salt to taste.
