Mexican molletes are a traditional Mexican recipe that are easy to make and perfect to serve for a crowd. I don’t make them that often, but when I do they are definitely a hit! They are easy to make and customize to your tastes, and that is what makes them a great appetizer for watch parties and other times when you get together with friends.
If you are like me, then you are probably always looking for new shows to watch. My husband and I have had pretty good luck finding a wide variety of shows that we love, but it is always great to find something new that can catch your attention.
That is what recently happened when I discovered the USA Network series “Queen of the South” on Netflix. If you haven’t watched yet, you can binge Season 1 on Netflix just in time because Season 2 is currently airing Thursdays at 10/9c on USA.
This show is about a Mexican woman that was forced to flee to the United States and becomes very powerful in the process. The storyline is so engaging and I got hooked right away!
I was able to watch the entire first season on Netflix in a short period of time and was so excited for the premiere of season 2 last week.
Watching this show made me realize that as women, we are all the Queen of something. Living with 4 boys has me feeling like a queen most of the time and I love it. No matter what, I always have my king and my princes around to make me feel great.
I was so excited to watch the season 2 premiere, that I decided to be the Queen of Cooking and cook up some good watch party appetizers and snacks. The main appetizer for my own personal watch party (my husband joined too :)) were the delicious molletes pictured above. I added some delicious chorizo, melted cheese, and pico de gallo to give it some amazing flavor.
Since this show reminds me a lot of Mexico, I decided to continue with the Mexican food them by accompanying it with homemade Horchata and Salsa Roja. These were the perfect snacks to munch on while we watched the exciting first episode of season 2.
Like I said above, I love finding new shows to watch and I encourage all of you to check out Queen of the South on USA Network. I know that you will be hooked on it right away and will be hosting your own watch party as you follow the main character along her journey.

Molletes Recipe – Perfect For Watch Parties And More
Ingredients
- 2-4 Bolillo style rolls
- 1 pound of chorizo
- Sliced or Shredded Mozzarella Cheese
- Pico de Gallo Tomato, onions, jalapeno, cilantro, and lime
- refried beans optional
- crema optional
Instructions
- Slice the bolillos and toast over the stove or in the toaster
- If using refried beans, spread on the bread. If not, continue to next step.
- Cook the chorizo and add some to each slice of bolillo
- Top with the cheese and melt in the microwave for thirty seconds
- Remove and top with pico de gallo and crema
