This Veracruz Style Fried Tilapia is a simple recipe that you will love! The flavors are amazing and there is never anything left on the plate!

Growing up in Mexico, the celebration of Lent was kind of a big deal! The fact that I grew up living in a coastal city meant that we would often celebrate Lent by abstaining from some of the common food and replacing it with lots of fish. Luckily, I am a big fan of all types of fish, so I was always excited to try the new ways that my mother prepared it.

One of my favorite preparations of fish is fried, with delicious homemade sauces with lots of fresh ingredients. The recipe I want to share today is for Veracruz Style Fried Tilapia (Veracruz is the state in Mexico where I grew up).

This was always a staple around our house during the time of Lent and throughout the year in general. The smells that permeated throughout our house were irresistible and there was never anything left on the plate.

This recipe may look complicated, but it is actually fairly simple to make! You start with a tilapia filet, and season it with salt, pepper, and cumin before frying it until it is cooked through.

After the tilapia is fried, it is time to create the delicious sauce that it is served with.

One of the key ingredients in this sauce is the 2.2 lb version of the Knorr® Tomato with Chicken Flavor Granulated Bouillon.

I always remember having plenty of Knorr® on hand when I was growing up, which is why I am glad that I can still find it easily in the Hispanic aisle at my local Walmart here in the United States.

In addition to the Knorr® you will add tomatoes, onions, garlic, olives, capers, green peppers and fresh herbs. After the sauce is done, you will finish cooking the tilapia in the sauce before serving with rice and tortillas.

Veracruz Style Fried Tilapia

Ingredients

  • 1 pound Fresh Tilapia Filets or you can use a whole Tilapia Fish
  • 2 Fresh Tomatoes diced
  • 2 Fresh tomatoes boiled
  • 1 tablespoon Knorr® Tomato with Chicken Flavor 2.2 lb Granulated Bouillon
  • 2 Garlic finely chopped
  • 1/2 onion finely chopped
  • 1/2 yellow pepper sliced
  • 1/2 Green pepper sliced
  • 1/3 cup of green olives
  • 1/3 cups capers
  • Fresh oregano
  • fresh thyme
  • 4 bay leaves
  • salt ground cumin and pepper to taste

Instructions

  • Season the tilapia filets with salt, pepper, and cumin.
  • Fry the filets in 1/4 cup of hot oil and set aside.
  • Add the garlic and onion to the same pan where you fried the tilapia and cook until translucent.
  • Add the diced tomatoes, the green and yellow peppers, the green olives, the capers, and the herbs and saute for 2-3 minutes.
  • In a blender, blend the Knorr® Bouillon with the two boiled tomatoes and 1/4 cup of water.
  • Add the above to the vegetables and herbs and mix well.
  • Add salt and pepper to taste if necessary.
  • Add the fried tilapia and let boil for about 5 minutes.
  • Serve with rice.
